Area of Origin: in the territories of Erice, Tangi area, district of Regalbesi. Primarily hilly clay soil.
Vinification technique: grapes are destemmed and crushed, obtained must remains in contact with the peels until the end of the alcoholic fermentation (approximately 30 days). Then it is decanted into concrete tanks where it completes the malolactic fermentation and the refining period for 15-18 months before being bottled. No type of stabilizing clarification is performed, it is bottled after a light filtration. May contain residues of “neutral potassium tartrate” on the bottom of the bottle due to the lack of stabilizing treatments induced in order to maintain the genuineness and healthiness of this wine.
