Area of Origin: Castelcerino di Soave, Veneto. Area of volcanic origin, clayey and south-east exposed.
Vinification Technique: the grape, harvested after the middle of October, is pressed directly, the must is immediately cooled and added with a few grams of sulphites. Separated from the lees without the use of enzymes, the must ferments in cement tanks for about 20 days at a controlled temperature. Before the end of the alcoholic fermentation, it is cooled and decanted to maintain the sugary residue necessary for the refermentation in the bottle. In April, at the first crescent moon of spring, it is manually bottled with the aid of simple manual fillers. At the end of September, when the necessary refinement have been completed, it is released without disgorging, with the dregs. No type of stabilizing clarification is performed, it is bottled after a light filtration. May contain residues of “neutral potassium tartrate” on the bottom of the bottle due to the lack of stabilizing treatments induced in order to maintain the genuineness and healthiness of this wine.

Taste: golden yellow wine, intense aroma with hints of ripe fruit. Presence of never intrusive bubbles. In the mouth it is full, structured, with good acidity, with the great minerality typical of this volcanic territory, very persistent.
