Marco the miller transforms our ancient wheat into flour and pasta. We found the mill after a long search in the province of Vicenza. They mill only organic or natural grain and only use millstone. What has convinced us, however, is the peculiarity of the extreme cleaning of the grain and the subsequent vacuum storage, so that the grain does not need any other treatment before pressing. It is, in fact, common practice to treat the grain with insecticides, or repellents in the case of organic production, to avoid the presence of insects. The milling is done by batch for each order and no flour is stored.
